After going out with friend’s yesterday morning, I came back home longing for sweet stuffs in the afternoon. I have some chocolates, some biscuits and ice cream on hand but it struck me to just go on carrot cake which is healthy to have. Having all the ingredients ready at home; quickly and easily I grab and create the simplest and first ‘Sugarless Carrot cake’ I ever made with success!

My sugarless Carrot Cake Main Ingredients:
4 eggs at room temperature
11/4 cups vegetable oil
2 cups wheat flour
2 teaspoons baking powder
I tsp baking soda
1 tsp cinnamon powder
1 tsp of lemon juice
Some lemon zest
¼ cup of sultana raisins and walnuts
A few thin slices of fresh ginger root
A few thin slices of sweet and salty nut-meg
2 cups grated organic carrots
1 cup grated pumpkin (it gives sweetness into the cake)
To serve: I garnished with some fresh alfalfa, mint leaves and a slice of lemon (optional).
My Carrot cake with my home made Dried Almond Nut Juice is perfect for my afternoon tea. I served a slice in the morning for the only man who loves me and who I dearly love. Carrot cake is healthy to savor specially baked with joy and true love.
