1.Introduction.
A long time ago along with cultivated herbs people used wild herbs for meal on.
They are used to make food .
Different herbs parts are eaten raw,or preserved,salted.
Wild herbs contain healthy needful elements we need –vitamins and organic acids.
Some wild herbs are even more healthy than a cultivated plants.
People in our country use wild herbs in drinks,soups,pancakes,etc.
Wild herbs are gathered from early spring to late autumm.
Avoid cooking herbs if you have a poor knowledge of them!
Some wild herbs may look like poisonous ones!
Avoid gathering near trains,stations.
Be careful-some herbs cause allergies,thus ask your doctor advice.
2.Wild herbs as a meal.
Puree from Butomus umbellatus L.
200 gr.roots herb.
50 gr.onion.
50 gr.sorrel.
Salt,pepper for taste.
Cook it is washed roots for 20 minutes,mince meat,add cut sorrel,roast onion,salt,pepper,cook till ready.
Serve as a meat dressing or,as a individual meal.
Willow herb soup.
100 gr.fresh herb.
100 gr.nettle.
100 gr.sorrel.
200 gr.potato.
10 gr.carrot.
40 gr.onion.
20 gr.margarine.
½ egg.
20 gr.fromage.
Salt,spicy for taste.
Add green for scald for 2 min.
Then add sieve,shred and stew in fat.
Cut carrot,and onion roast.
Add potato,green,in boiled water and cook till it s ready.
Ten min.to end add salt,spicy.
Egg and fromage add.
When the soup is ready .
Chicory salad.
200 gr.young shoots of chicory.
10 gr.margarine.
And salt if you want.
Wash chicory,cut in small pieces,stew in margarine for ,in,add salt,cool,sprinkle petroselum.
Soup from a burdock net leaf.
300 gr.leafs.
80 gr.onion.
40 gr.rice.
40 gr.fat.
200 gr.potato.
Salt,pepper for taste.
Wash and cut potato,cook rice.
Cut leafs and roasted onions,add in soups before serving.
Stewing Aegopodium with potato.
100 gr.fresh herb.
100 gr.potato.
15 gr.onion.
1 gr.dill.
15 gr.tomato sauce.
15 gr.fromage.
Salt for taste.
Shred leafs and young shoots of herbs ,add salt,stew to half-ready,add stewed potato,onion,add fromage,stew 15 min,add dressing.
Nettle rolls.
100 gr.nettle.
200 gr.millet porridge.
20 gr butter.
Salt.
Scald nettle,rub,cook in boiled water for three min,cut,add porridge,form rolls,and bake in form,spreaded with butter.
Borago salad.
50 gr.borago leafs.
50 gr.canned pepper.

7 gr.oil.
Cut washed herb,add pieces of pepper,cabbage,dress oil.
Potentilla green soup.
150 gr.potentilla leafs.
50 gr.sorrel.
5 gr.carrots.
5 gr.petroselum.
20 gr.green onion.
5 gr.millet flour.
10 gr .butter.
½ egg.
15 gr.fromage,bay leaf,salt,pepper.
Boil leafs for 3 min.
Mince meat ,stew in butter 15 min.
Cut carrot ,petroselum,roast onion in butter.
Add herbs and vegetables,onion,cook for 25 min.
Add white sauce,bay leaf,pepper,pink,sorrel,fromage.
Porridge from tubers Sagittaria.
200 gr.tubers of herbs,one glass of milk,one tbl.sp.sugar,salt.
Cook tubers in salted water for 5 min,clean,to mince meat.
Add glass of milk,sugar in puree,and cook till it s ready.
Dandelion salad.
100 gr.of dandelion leafs.
50 gr.green onion.
25 gr.petroselum.
15 gr.butter,salt,vinegar,pepper,dill,1 egg.
Scald leafs in salted water for 30 min,cut.
Add cut petroselum,onion,butter,mix,sprinkle dill,decorate with a hardboiled egg.
Allium for pies.
500 gr.herb.
100 gr.rice.
2 eggs.
Butter,salt,pepper.
Cook rice,add cut leafs allium.
Rub hard-boiled eggs,add rice,herb,butter,salt,spices,water.
