
Summer’s here and there’s nothing like a tall, cool cocktail to slake your thirst on a hot day…
One of the easiest and tastiest drinks to make is the Blue Hawaiian, which simply uses pineapple juice, cream of coconut, Blue Curacao, Vodka, white rum and sometimes Sweet & Sour Mix, as at the Hilton bars, where the cocktail was created in 1957 at the Hilton Hawaiian Village by bartender Harry Yee, where it was later named the “Blue Hawaii” by him after the 1961 Elvis Presley film by the same name.
However, it’s not always easy to find pineapple juice or cream of coconut or have any onhand when the mood for a tall, cool Blue Hawaiian hits...
By accident, I discovered that it’s far more convenient to have a bottle of Pina Cola mix in the refrigerator than stocking either cream of coconut or coconut essence or pineapple juice.
To the Pina Colada mix, add some white rum and Blue Curacao and mix with crushed ice and you can’t find a more refreshing drink for a hot summer day!
Ingredients:
2 parts Pina Colada mix
1 part white rum
1 part Vodka
1 part Blue Curacao
½ glass crushed ice
Just add all the ingredients into a tall glass and mix well with a spoon, add a straw and enjoy… Aloha and cheers!
