Here is a refreshing egg salad sandwich recipe for summer which can be altered a bit using a smoked bacon or any other smoked or cured meat of your choice such as Canadian bacon or ham.
Similarly, you can use dill pickle or capers alone or together for extra kick as in this recipe. You may even choose to add a little heat with the addition of cayenne pepper instead of the sweeter paprika – again your choice!
Try adding meaty black olives to the mixture just to shake things up even further or use spring onions or chives instead of regular onions…
Ingredients:
2 tablespoons butter, softened
2 tablespoons mayonnaise
1 teaspoon tangy yellow mustard
2 tablespoons onion, finely chopped
2 teaspoon capers, chopped
1 small kosher dill pickle, finely chopped
3 hard-boiled eggs, diced and mashed
salt and pepper to taste
½ teaspoon paprika
2 meaty rashers of cooked smoked bacon, chopped or the equivalent of Canadian bacon or ham
your choice of bread
lettuce and tomato for garnish
Instructions:
Blend all ingredients together and spoon onto your choice of bread or roll and top off with lettuce and tomato for a bit of vegetables. Enjoy with spring onions and radishes on the side, dipped in kosher or sea salt. Terrific with a fruit juice, such as apricot, mango, peach or guava nectar!
