Cinco de Mayo Recipes: Best guacamole with roasted garlic

It's essential to follow the procedure to make this special Cinco de Mayo recipe for guacamole on the first time to enhance the flavor. It's easy to adapt it to your own taste by adding more cilantro, garlic or some ground cumin.

Remember the key to this delicious Cinco de Mayo guacamole is roasted garlic and lime juice. The lime juice adds acidity and keeps it from turning brown. Jalepenos should be seeded, ribbed and finely chopped to add little heat or add some cumin. It should be chunky from the tomatoes, onion and peppers, and the avocado should be very smooth and fresh. Don't make the guacamole too soon, maybe a few hours before, as some discoloration can occur. That way your guacamole stays nice and fresh but the flavors have time to blend. Cinco de Mayo Recipes: Spicy Guacamole with Roasted Garlic

Ingredients

3 avocados(smooth) - peeled and mashed

1 lime, juiced 1 teaspoon salt

1/2 cup diced onion 3 tablespoons chopped fresh cilantro

2 roma (plum) tomatoes, diced

1 teaspoon chopped roasted garlic (roast garlic with olive oil in oven)

2 teaspon virgin olive oil

1 chopped seedless Jalapeno (optional)

Directions: In a medium bowl, mashed the avocados, then lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately with your favorite chips. Chicken or beef tacos can gel well with your guacamole too.
