Will the insect-eating-for sustainability-and nutrition movement ever reach mainstream Sacramento? It's growing into a new, big trend in San Francisco and has been known about for eons in non-European nations. See, You Wouldn't Eat Bugs, Would You? | Food Republic. Now we have the first food cart with a permit to sell edible bugs in San Francisco.

The world is becoming smaller with global travelers bringing back more food ideas and customs, such as raising bugs on a farm and selling them to chefs, restaurants, and food markets nationally, locally, and globally. But you need to know the bugs were raised on a bug farm to be eaten by humans. Will insects ever make it to the food stores?

There definitely is a niche market for bugs with numerous websites on how to clean insects for eating. The question is whether bugs are a delicacy or the only way people in various countries can find enough food and get required protein? If you travel to various parts of the world, buts are part of the diet of most people who view them as either a necessity or a delicacy.

European countries are least likely to take to eating bugs. Some people even eat stinkbugs, but most don't like the way they taste. If the bugs are clean and grown on an insect farm where the bugs are meant for human consumption, they can be a good source of protein and fat. They are cheaper to raise than raising livestock such as lamb, goat, pork, chicken, or beef.

Are bugs cleaner than bottom feeders that eat the feces of fish? Bottom feeders in the ocean include shrimp and crabs. But people don't eat mealworms that live on grain because most people think if they eat worms the worm eggs will hatch in their body and move into their brains and eyes. That's the reason why most people are afraid to eat mealworms--because they're worms.

How do you promote insect eating in Sacramento? If you want to roast crickets, you can use a sauce and spices native to a particular area of the world such as pre-Hispanic cuisine or Asian cuisine such as Thai-style sauces.

When you roast bugs you need to remove the wings and legs. People don't want legs, wings, or hooks getting caught in their throats. Also the food looks better without the bug legs sticking out or the wings swimming in sauces on a plate. It's easier to look at visually for those not used to looking at bugs for food. One example might be the custom of removing the faces of shrimp when you serve scampi. In other countries, the cooked shrimp's eyes stare at you.

Roasted bugs are crisp and taste like nuts. It's one way to eat low on the food chain. For vegans, eating lower on the food chain can mean eating sea vegetables or algae powder.
