Baked Quinoa Humintas with Apples

Huminta ingredients:

2 1/2 cups quinoa, rinsed

5 cups apple juice or cider

4 cups skim or 2% milk

1 T sour cream

3/4 cup granulated sugar

1/2 cup canola oil

1 t salt

1/2 t ground cinnamon

1/8 t ground clove

1 t aniseed, optional

3 eggs

1 1/2 lbs white cheese, finely shredded. Monterrey jack or Mozzerella works well.

Apple filling ingredients:

2 cups apples, finely diced, about 2-3 medium apples. (Cortland, Empire, Jonathan, Jonagold, McIntosh, Ida Red and Pippin apples are excellent choices for this recipe.)

1/4 t ground cinnamon

1/4 cup granulated sugar, optional

Make the huminta batter:

  • Cook quinoa according to package instructions but substitute apple juice/cider for water.
  • Preheat oven to 400F degrees. Spray a 12 x 12 inch glass baking pan with non-stick spray.
  • Puree 5 cups of the cooked quinoa with milk in a blender or food processor. You may have to do this in batches.
  • Pour into a large bowl and add sour cream, sugar, oil, salt, cinnamon, clove and aniseed. Stir well until all ingredients are blended.
  • In a separate bowl beat egg whites until stiff then add egg yolks, one at a time, beating well in between additions until a creamy mixture is obtained.
  • Combine quinoa and egg mixture then add cheese and mix well.
Make the apple filling:

  • Combine apples and cinnamon.
  • If you like things sweet or your apples are on the tart side add 1/4 cup sugar or sugar to taste to the apple mixture.
Assemble the humintas:

  • Layer half of the quinoa mixture into the baking pan, layer with apple mixture then top with remaining quinoa mixture so the apples are sandwiched between two layers of quinoa
  • Bake for about 1 hour or until browned and set. Let sit for at least 15 minutes. Best served warm.
