Smoked-Trout Salad with Mustard Dressing

Healthy Recipes low cal- White Bean Cannellini Red Pepper Salad - easy quick to cook

1. 1 medium shallot, chopped

2. 1 1/2 tablespoons sherry vinegar

3. 1 1/2 tablespoons red wine vinegar

4. 1 tablespoon Dijon mustard

5. 2 1/2 tablespoons vegetable oil

6. 1 1/2 tablespoons walnut oil

7. Salt and freshly ground pepper

8. 2 Belgian endives, leaves separated

9. 1 Granny Smith apple—halved, cored and very thinly sliced on a mandoline

10. 1/2 cup walnuts, coarsely chopped

11. 1/2 pound boneless smoked trout or whitefish, broken into pieces

12. 1 cup small watercress sprigs

  1. In a blender, puree the shallot, vinegars and mustard. Gradually blend in the oils. Season with salt and pepper.
  2. Arrange the endives, apple, walnuts, trout and watercress on plates. Drizzle with the dressing and serve.
